Eater LA finally arrives
Last night Kat from Eater LA came into the Library Bar to review me and my new menu and we had a great time. I started her off with a passion fruit amuse bouche. Then, The Last Tango in Modena which served in a quaffer glass. I recreated the Last Word cocktail which is my favorite classic cocktail and named it The Absolute Final Word. It's the Last Word cocktail with organic cacao nibs floating on top and I reduced Yellow Chartreuse and then cooked it to create a rim around the glass.
Then we got into the majority of the new cocktails. An heirloom tomato mojito, a 17 step bloody mary, an arugula gimlet, a saffron infused gin, a fig infused bourbon, a prosciutto infused bourbon with a black maple walnut liqueur, a yellow raspberry and sage cocktail topped with ginger beer and then finally finished her off with a Champagne cocktail I call Autumn Pudding. It has muddled blackberries, raspberries and Chambord which is then topped with a Saint Germaine foam. I also created a Shiso gimlet for the first time that would pair really well with our Hamachi dish at Dakota.
Can't wait to read her review. She stayed for 5 hours so I think it is going to be a good one!!!!!

I created three new drinks this week. A saffron infused gin with fever tree tonic water and fresh lime, an arugula gimlet called, the Roquette which translates to Rocket, what they call arugula in Europe and Sage Heaven. Yellow raspberries with sage, lemon, agave, vodka and ginger beer. All of these will be on the new menu and all of these will be review by Eater LA on Wednesday, I can't wait!!!
