I loved learning the Blood and Sand cocktail. 3/4 of blended scotch, 3/4 Cherry Heering, 3/4 sweet vermouth and 3/4 fresh mandarin juice. What a beautiful cocktail. Served with a big ice cube on the rock with a long thin orange peel. I now have not only another classic cocktail under my belt but something extremely delicious to recommend to scotch drinkers.

I go to sushi once a week and I have always wanted to have a bar that is run like a great sushi restaurant. Recently I've come across Hugh Garvey's article (http://www.bonappetit.com/magazine/2008/09/tokyo_cocktail_capital_of_the_world) about the Tokyo bar scene and I can't wait to go. I know that this is the direction that I want to bring my bartending and the Library bar. I'm really looking forward to furthering this style and even expanding upon it. I love fresh and beautiful things and I want that to come across in all aspects of the bar, the drinks and the snacks. I want to continue to hand craft these things and escalate them to the next level.

I am also really excited about a Chartreuse competiton at the Doheny on August 10th. My favorite classic cocktail of all time is the Last Word!

  1. I just saw this awesome video of Epicurious: a new twist on the blood and sand that subs the cherry herring with cherry ale and the orange juice with whipped orange froth. Looks delicious.
