Just got back this week from touring the Patron distillery outside Guadalajara, Mexico. First of all, they treated us like kings. But for me it was so fascinating to see the whole process from cutting the agave, to cooking the agave, to fermenting it, to distilling it, to aging it, to finally bottling it. It is a beautiful Hacienda that has close to 1200 employees and has consistently grown up to 50% a year over the past few years. Patron is unique in the sense that it is a blend of two different processes that make up the Silver. The whole process takes up to 7 days. They cook the agave for 72 hours and then let it cool for 12 hours. Then they ferment it for three days and then distill for about a 1/3 of the day. The distillery was beautiful, everyone was kind and we had an incredible four course meal followed by an amazing Cuban cigar. I had just a wonderful, wonderful time and can't wait to go back and learn more.
